Pour the curds into a colander covered by a cheesecloth . allow to drain for 30 minutes. place the cheesecloth into a squared mold, to get a squared shape and press to get the excess whey. place in the fridge for 30 minutes to consolidate, then open the cheesecloth and place it in a serving dish.
